As I mentioned last week, we did our Christmas gift exchange on Valentine’s Day. Holy shit, Matt knocked it out of the park this time! 😍😍

ALL the thoughtful gifts… Things that I randomly mentioned, things that I SWORE I was going to replace and hadn’t gotten around to it… And then, there was the paella pan.

Paella has been a thing in my family for awhile now. All that yummy, rice-y, seafood-y goodness. We had a whole paella night while we were in Florida over the holidays, and, well, yum. That’s pretty much all I have to say about that.

Needless to say, paella was high on the list of dinner choices in the days after I got the pan. No pressure, though, right? Doesn’t help that my whole family is AWESOME at cooking… I’m not bad, but I sure felt like I had to step up my cooking game. I defaulted to the interwebs and found two recipes that sounded pretty good.

So I went in search of all the proper ingredients and spices, found the (Spanish style, for god’s sake) chorizo… Not to mention a couple bottles of the perfect wine to go with it.

A solid Spanish Tempranillo was the perfect complement.

…thawed the shrimp, chopped the onions and the red bell peppers, marinated the chicken… (I MAY have poured a glass of wine somewhere in the chopping phase.) …and figured out which part of which recipe I was going to follow. (I do that a LOT…)

Safron and pimentón. Thank you, Trader Joe’s. Oh, and chopped red bell pepper and onion.

Long story short, it. Was. DELICIOUS. It’s not all that often that I eat something I made and think, “damn, I made this?!?!” But yeah. It was that good, not gonna lie…

I STILL can’t believe how good it was.

And now a teeny, tiny bit of seriousness. Would you guys like the recipe for the paella that I actually ended up using? The mishmash of the two I started with? And would you like more cooking content? Because I have shit tons where that came from…. Comment below! Thanks!
